Pineapple Mango Tropi-Cobbler

Every bite of this quick, easy cobbler will take your taste buds to the tropics.  Featuring two of the most popular Fair Trade Certified fruits, pineapples and mangos, this dish provides a unique twist on a traditional dessert that honors the delicious products of farmers in the Caribbean.   

This recipe was adapted from a delicious Peachy Raspberry Cobbler by Isa Chandra Moskowitz found in her new book Isa Does It: Amazingly Easy, Wildly Delicious Vegan Recipes for Every Day of the Week.  We highly recommend this beautiful cookbook, which is filled with dozens of easily Fair Trade Certifiable recipes.

Preparation Instructions:

Preheat the oven to 425 F.  Mix all of the filling ingredients together in an 8-inch square baking dish.  Cover with aluminum foil and bake for 20 minutes.

Mix the milk and apple cider vinegar and set aside for a few minutes until it curdles.  In a separate bowl, combine the flour, baking powder and salt.  Add the sugar and then mix in the coconut oil.  Use your hands to form large crumbs in the bowl, and then add the milk and vinegar.  Stir gently a few times.

Remove the fruit from the oven, uncover the dish, and add the topping by the spoonful to completely cover with a thick layer.  Then sprinkle the coconut, cinnamon and sugars evenly over the top.

Put it back in the oven and bake, uncovered, for 20 minutes.  Serve warm with your favorite Fair Trade Certified ice cream.
