Classic Banana Walnut Bread
- 1 cup shortening
- 1 cup Fair Trade sugar 
- 2 eggs
- 3 large Fair Trade bananas , mashed
- 1 tsp. baking soda dissolved in 3 tablespoons water
- ½ tsp. salt
- 2 cups flour
- ½ cup chopped walnuts
- 1 tsp. Fair Trade Certified vanilla extract 
Cream together shortening, sugar and eggs. Add bananas and water with soda together. Mix bananas alternately with dry ingredients into creamed mixture. Add nuts and vanilla extract.
Pour into greased loaf pan and bake for 1 hour at 350 degrees. It can take between 1 hour & 10-15 minutes to bake through – test by inserting a toothpick into the loaf's center and see if it comes out clean.
