Bon Appetit Brings Fair Trade Chocolate to its Kitchens This Valentine's Day
What do Yahoo! Cisco and eBay all have in common? Fair Trade Certified chocolate of course! Restaurant management giant Bon Appetit recently announced a commitment to introduce Cordillera Fair Trade Certified chocolate to all of its kitchens beginning this Valentine's Day. As Bon Appetit provides cafe and catering services to corporations, colleges, and universities in 400 locations throughout 29 states, it’s no wonder that their change in food sourcing practices has the potential to create a tremendous ripple effect.
A New Corporate Standard
Since 2004 all Bon Appetit locations have been required to offer Fair Trade coffee, but this is the first time the company has endorsed a specific brand on a national basis. This is also the first time any large food management company has brought Fair Trade chocolate into its kitchens. In the past, Bon Appetit has only offered the chocolate in prepackaged individual bars. Now with this new Fair Trade standard at work in the kitchen, the ability to buy high-quality, responsibly sourced goodies has never been easier.
For Bon Appetit, Cordillera is the perfect Fair Trade chocolate to introduce to their kitchens."It tastes great and comes in food service-size packs, which isn't the case for a lot of Fair Trade products,” says Helene York, the company's director of strategic initiatives.
From the Farm to Your Office
Not only does this shift to Fair Trade set a new corporate standard in the world of catering and café service, it also generates a great deal of positive impact for the cocoa farming communities where the chocolate is sourced. The adoption of this new purchasing practice "means that more money is returned to the [Colombian] community in which the crops are harvested," explains York. It means the ability for cocoa farmers and farm workers to invest in the quality of thier cocoa, in thier children's education, in the health of thier families and in the sustainable development of thier businesses.
Fair Trade USA applauds these efforts of Bon Appetit to support the cultivation of a more equitable global trade model that benefits farmers, workers, consumers, the industry and the earth. By introducing Fair Trade chocolate to such a large number of venues, the possibility for expansion into other product categories is that much closer. Fair Trade is gaining momentum!
